Overnight Ribs

October 29-30

Overnight Ribs Started these ribs on Friday night and ended Saturday morning 6 1/2 hours later. Used my cajun rub. Temp ranged from 221-249 when I awoke. Opened the WSM and did the tear test and voila these babies are done! Possibly went a little long as the edges were a little crispy. Nice bark though. More and more I am convinced that a lower temp on ribs is the way to go. Next time I dont open the vents a little when I hit the sack just leave it at 225-230.
